Ingredients

For meatballs:

2 pounds lean ground turkey

1 cup panko (Japanese breadcrumbs)

1-2 cups vegetables of your choice, chopped fine (examples: carrot, onion, kale) 

2 large eggs

2 tablespoons Italian seasoning

For sauce:

1 small onion, finely chopped

2 cloves garlic, minced

2 teaspoons Italian seasoning

1 Tablespoon canola oil

1 (14-ounce) can crushed tomatoes, no salt added

1 (8-ounce) can tomato sauce, no salt added

Instructions

  1. In a large bowl, mix turkey, breadcrumbs, vegetables, eggs, Italian seasoning, and salt until well combined; form into 1-inch balls. Set aside.
  2. Prepare sauce: Heat oil over medium heat and add onion and cook until softened, about 2 minutes. Add garlic and Italian seasoning. Stir constantly for 30 seconds. Add tomato sauce and crushed tomatoes. Bring to a boil, then lower heat to a simmer.
  3. Add meatballs to the sauce. Cook, partially covered, for 10 minutes without stirring (stirring before the meatballs “set” may break them up into the sauce).
  4. Gently stir and cook, partially covered, until the meatballs are just cooked through, about 5 minutes more. 
  5. While meatballs are cooking, toast cheese on rolls. Serve meatballs on rolls with toppings.
