Ingredients
For meatballs:
2 pounds lean ground turkey
1 cup panko (Japanese breadcrumbs)
1-2 cups vegetables of your choice, chopped fine (examples: carrot, onion, kale)
2 large eggs
2 tablespoons Italian seasoning
For sauce:
1 small onion, finely chopped
2 cloves garlic, minced
2 teaspoons Italian seasoning
1 Tablespoon canola oil
1 (14-ounce) can crushed tomatoes, no salt added
1 (8-ounce) can tomato sauce, no salt added
Instructions
- In a large bowl, mix turkey, breadcrumbs, vegetables, eggs, Italian seasoning, and salt until well combined; form into 1-inch balls. Set aside.
- Prepare sauce: Heat oil over medium heat and add onion and cook until softened, about 2 minutes. Add garlic and Italian seasoning. Stir constantly for 30 seconds. Add tomato sauce and crushed tomatoes. Bring to a boil, then lower heat to a simmer.
- Add meatballs to the sauce. Cook, partially covered, for 10 minutes without stirring (stirring before the meatballs “set” may break them up into the sauce).
- Gently stir and cook, partially covered, until the meatballs are just cooked through, about 5 minutes more.
- While meatballs are cooking, toast cheese on rolls. Serve meatballs on rolls with toppings.
