Yield: 10-12 meatballs
Ingredients
Meatballs
2 (6 oz.) cans of salmon
½ cup panko bread crumbs
2 green onions, finely chopped
1 tablespoon minced garlic
½ teaspoon ground ginger
1 teaspoon sesame oil
1 egg
Sauce
⅓ cup pineapple juice (or orange juice)
⅓ cup tomato sauce
a pinch of brown sugar
1 tablespoon sriracha or hot sauce, to desired spice level
2 tablespoons low-sodium soy sauce
½ teaspoon ground ginger
Instructions
- Preheat oven to 350F. Coat a large baking sheet with cooking spray or line it with foil or parchment. Set aside.
- Combine all the ingredients for the meatballs in a medium bowl. Using clean hands, stir until well combined (add more panko if necessary).
- Pack tightly into 1.5 in. meatballs. Place the meatballs onto the prepared baking sheet and bake for 15-18 minutes.
- Prepare the sauce by combining the ingredients into a small pot. Bring to a gentle boil then let simmer for about 8-10 minutes, stirring often.
- Toss meatballs in sauce and serve with sautéed vegetables or other side.
