Yield: about 24 muffins

Ingredients

5 cups rolled oats

2 ½ cups ripe mashed banana 

1 tsp salt

5 Tbsp maple syrup, agave, or honey

2/3 cup mini chocolate chips or fruit, optional

2 1/3 cups water

¼ cup + 1 tbsp vegetable oil 

2 ½ tsp pure vanilla extract

Additional optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax, chia, wheat germ, raisins, dried fruit

Instructions

  1. Preheat oven to 375 F, and line muffin tins. 
  2. In a large mixing bowl, combine all dry ingredients and stir very well. 
  3. In a separate bowl, combine and stir all wet ingredients including mashed banana. 
  4. Mix wet ingredients into dry then pour into the muffin tins.
  5. Bake 20-25 minutes. 
  6. These oatmeal cakes can be eaten right away, or they can be frozen and reheated for an instant breakfast or snack on a busy day.
