Ingredients
1 can black beans (or 1½ cup)
½ cup quick or old-fashioned oats
6-8 dates (soaked & pitted)
⅓ cup cacao powder
1 teaspoon vanilla
Optional mix-ins: crushed nuts, seeds, coconut flakes
Instructions
- Rinse and thoroughly drain black beans.
- Add ingredients into food processor or blender and puree – about 3 minutes – scraping down sides as needed until smooth.
- The batter should be thick like cookie dough. If the batter is too thick, add a 1-2 tbsp of water and pulse again.
- Add in mix-ins if using and pulse until mixed together.
- Use a 2” ice cream scoop or spoon to scoop dough to make bite size brownie balls. Roll and store in fridge.
