Yield: 12-16 servings

Ingredients

1 can black beans (or 1½ cup)

½ cup quick or old-fashioned oats

6-8 dates (soaked & pitted)

⅓ cup cacao powder

1 teaspoon vanilla

Optional mix-ins: crushed nuts, seeds, coconut flakes

Instructions

  1. Rinse and thoroughly drain black beans.
  2. Add ingredients into food processor or blender and puree – about 3 minutes – scraping down sides as needed until smooth.
  3. The batter should be thick like cookie dough. If the batter is too thick, add a 1-2 tbsp of water and pulse again. 
  4. Add in mix-ins if using and pulse until mixed together.
  5. Use a 2” ice cream scoop or spoon to scoop dough to make bite size brownie balls. Roll and store in fridge.
