Ingredients

2 tablespoons Olive oil

1 Large onion chopped

1 pound ground turkey 

6 Cloves garlic minced

1½ tablespoons ground coriander seed

2 teaspoons Cumin

1 teaspoon White pepper

2 cups Water

2 Large tomatoes blended (or 1.5 cups low sodium tomato sauce)

1 tablespoon Tomato paste

1 green jalapeño pepper seeded and minced

1 inch fresh ginger crushed or minced

1 teaspoon Salt

2 cups fresh okra cut into 1-inch pieces (or one 10-oz. package frozen okra, thawed)

Instructions

  1. Heat oil in a large pot over high heat. Add onion and cook until soft.
  2. Add turkey, garlic, coriander, cumin, and white pepper. Stir and cook until turkey is brown, about 5 minutes.
  3. Add water, tomatoes, tomato paste, chili, ginger, and salt. Stir and bring to a boil. Reduce heat to low. Cover partly and simmer until meat is tender, 30 to 40 minutes.
  4. Stir in okra. Simmer 10 minutes.
  5. Serve with ½ cup cooked bulgur or brown rice.
