Yield: 6-8 servings

Ingredients

2 tablespoons vegetable oil

2 cloves garlic, minced

2 cups onion, chopped

1 red bell pepper, chopped

1 green bell pepper, chopped

1 1/2 cups celery, chopped

1 cup carrots, diced

5 cups chicken stock

salt and pepper to taste

2 cups spinach

1 cup egg noodles

2 cups shredded chicken

Instructions

  1. Heat oil in a large soup pot over medium heat. Add all the vegetables except the spinach.
  2. Saute until onions are translucent and the vegetables are starting to soften. Add stock and season with salt and pepper.
  3. Bring to a simmer and cook for about 20 minutes 
  4. Stir in the chicken, spinach, and noodles. Cook about 5 minutes adding more broth if needed. Check seasoning then serve.
