Ingredients
2 tablespoons vegetable oil
2 cloves garlic, minced
2 cups onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 1/2 cups celery, chopped
1 cup carrots, diced
5 cups chicken stock
salt and pepper to taste
2 cups spinach
1 cup egg noodles
2 cups shredded chicken
Instructions
- Heat oil in a large soup pot over medium heat. Add all the vegetables except the spinach.
- Saute until onions are translucent and the vegetables are starting to soften. Add stock and season with salt and pepper.
- Bring to a simmer and cook for about 20 minutes
- Stir in the chicken, spinach, and noodles. Cook about 5 minutes adding more broth if needed. Check seasoning then serve.
