Yield: 8-10 servings

Ingredients

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 pound ground turkey

3 (15 ounce) cans black beans, drained and rinsed

1 (14.5 ounce) can crushed tomatoes (or whole peeled tomatoes, mashed)

1 1/2 tablespoons chipotle chili powder 

1 tablespoon red wine vinegar

1 stalk of celery, diced

1/2 cup carrots, diced

1 bell pepper, diced

1/2 jalapeno, seeded and diced (less if you don’t like spice, more if you do)

1 tablespoon cumin powder

1/2 tablespoon cinnamon

1-2 tsp crushed red chili pepper

1/2 tsp smoked paprika 

1 1/2 teaspoons unsweetened cocoa powder

salt and pepper to taste

Instructions

  1. Brown the turkey, onions and garlic together in a large pot over medium heat.
  2. When meat is cooked, add all the ingredients into the pot. Adjust spices, peppers, and seasoning to taste.
  3. Simmer on medium-low heat for about 45 minutes or until flavors blend together.
  4. Try serving with fresh chopped green onions, cilantro, or cheese of your choice.
