Ingredients

1 (14-ounce) package firm tofu, drained

3 cloves garlic, finely chopped

3 green onions, finely chopped

1 (15-ounce) can black beans, drained and rinsed

1-2 cups vegetable(s) of your choice, evenly chopped or diced (examples: leafy greens, bell peppers, squash, cauliflower)

Oil for cooking, salt and pepper for seasoning

Taco seasoning:

1 tablespoon light oil (example: canola)

¼ cup tomato sauce

2 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon cayenne (optional for spice)

Toppings:

Avocado

Salsa

Instructions

  1. Mix the oil, tomato sauce, and all the spices in a large bowl. Crumble the tofu with your hands or fork and mix with the seasoning making sure all of the tofu is evenly coated.
  2. Heat 1-2 tablespoons oil in a large skillet over medium heat. Add garlic, green onions, and vegetable(s). Cook until starting to soften, about 3-5 minutes. Add tofu mixture and cook, stirring occasionally, until most of the moisture has evaporated, about 8-10 minutes. Add beans, stir well and cook until beans are heated through, about 2 minutes.
  3. Serve taco mixture on corn or flour tortilla, top with additional toppings as desired. You can also turn into a taco salad by serving on bed of greens.
