Yield: 10-12 meatballs

Ingredients

Meatballs

2 (6 oz.) cans of salmon

½ cup panko bread crumbs

2 green onions, finely chopped

1 tablespoon minced garlic

½ teaspoon ground ginger

1 teaspoon sesame oil

1 egg

Sauce

cup pineapple juice (or orange juice)

cup tomato sauce

a pinch of brown sugar

1 tablespoon sriracha or hot sauce, to desired spice level

2 tablespoons low-sodium soy sauce

½ teaspoon ground ginger

Instructions

  1. Preheat oven to 350F. Coat a large baking sheet with cooking spray or line it with foil or parchment. Set aside.
  2. Combine all the ingredients for the meatballs in a medium bowl. Using clean hands, stir until well combined (add more panko if necessary). 
  3. Pack tightly into 1.5 in. meatballs. Place the meatballs onto the prepared baking sheet and bake for 15-18 minutes.
  4. Prepare the sauce by combining the ingredients into a small pot. Bring to a gentle boil then let simmer for about 8-10 minutes, stirring often.
  5. Toss meatballs in sauce and serve with sautéed vegetables or other side.
