Ingredients

1 15 oz Can Chickpeas

1 Tsp Turmeric

1/4 White Onion diced

2 Cloves Garlic minced

Drizzle Extra Virgin Olive Oil

Salt and pepper to taste

1 cup Vegetables of your choice

Instructions

  1. To start, mince garlic and dice onion and vegetables of your choice. 
  2. Heat a pan over medium heat with a drizzle of olive oil. Sauté the onions until they are soft then add the garlic and additional vegetables. Continue sautéing until everything is slightly softened.
  3. In a bowl, pour out chickpeas AND a little bit of the water they’re in. Mash chickpeas slightly with a fork, leaving some whole. Mix in turmeric, salt, and pepper until evenly combined.
  4. When vegetables are done, add in mashed chickpeas and sauté for about five minutes.

Chickpeas (also known as garbanzo beans) make a great substitute for eggs. Just lightly mash the chickpeas and reserve some of the liquid, or aquafaba.
